I live in Alabama. Alabama is a Big. Football. State.
Maybe you’ve heard of Nick Saban? Bear Bryant? The currently undefeated Auburn Tigers are here in this state, too, and it makes for a competitive, fun, feisty season every year!
Weddings are planned around football schedules, tailgating becomes a new sport, and the question that gets asked when meeting someone new is, “Alabama or Auburn?”
So… having something good to eat while watching football games goes to the top of the priority list!
I’ve got a recipe for you… it’s easy, filling, and tasty! It’s my new Easy Chicken Chili.
Ingredients:
3-4 chicken breasts, boneless, skinless
1 pkg Chili-O Seasoning Mix
1 can chili beans, undrained (I use Bush’s brand for all my beans)
1 can navy beans, drained
2 cans black beans, drained
3 cans diced tomatoes , undrained
(I used 2 cans Hunt’s Diced Tomatoes With Green Peppers, Celery And Onion
& 1 can Hunt’s Diced Tomatoes Fire Roasted)
1. Boil Chicken breasts. Remove from broth.
2. Chop/Shred chicken, place back in empty dutch oven.
3. Add remaining ingredients, stir.
4. Bring to a boil while stirring. Reduce heat and simmer for 10 minutes. Stir occasionally.
5. Serve with tortilla chips, cheese, sour cream, etc. (Or just serve plain!)
Note: I was going to add a can of corn, but when I opened the can I realized it was Creamed Corn! So, if you try it with corn before I do, let me know how you like it!
